"Ehyeh asher Ehyeh" would mean I AM who I AM, because the real name of God when taken from that statement is I AM (Ehyeh), asher would be translated as "who," if you read Exodus 3:14 well, it says, "God said to Moses, 'I AM WHO I AM'; and He said, 'Thus you shall say to the sons of Israel, 'I AM has sent me to you.'" I AM is the actual name, (I AM that I AM) or (I AM who I AM) is God describing Himself, when He says 'I AM has sent me to you,' He only uses I AM (Ehyeh). He doesn't mention asher in the second part of the verse.
This can also be backed up by these verses where I AM/is (Ehyeh) is left by itself (without asher), Exodus 6:3; John 8:24, 28, 58; Hebrew 13:8; Revelation 1:8; 4:8. The "yah" in "Ehyeh" is the shortened version of YHWH/Ehyeh, you can see it in many biblical terms such as hallelu(Yah). In John 8:58, Jesus said to the Saducees and Pharisees that he was I AM, thats what made them want to stone Him to death(John 8:58-59). He didn't say Ehyeh asher Ehyeh, He said Ehyeh (I AM).
Throughout the Bible, I AM is left alone as the Name of God, "I AM that I AM" is a description of Who He Is.
